I got this idea after my favorite low-calorie snack bar got taken off the market and I tried some crisp rice snack bars from Costco as an alternative. These snack bars are low calorie mostly because they are full of air, not because they use some novel ingredients or a sugar replacement. Try adding cocoa powder, coconut flavoring, almond extract, or other flavorings.
Ingredients:
- 2/3 cup syrup (brown rice, maple, corn, a blend, or syrup of similar viscosity)
- 1/4 cup coconut oil (palm oil should also work)
- 1 teaspoon vanilla
- 1/2 teaspoon salt
- 4 cups crisp rice cereal
- 1/4 cup seeds, nuts, shredded coconut, or rice cereal
Put the syrup, oil, vanilla, and salt into a microwave-safe cup and microwave for one minute.
Mix the syrup combination well.
Microwave for another thirty seconds.
Drizzle half of syrup over 4 cups of crisp rice cereal plus 1/4 cup seeds or nuts in a large bowl.
Fold the mixture together with a spatula until well incorporated.
Drizzle the remaining syrup over the cereal.
Fold the mixture until the syrup is evenly distributed.
Pour on parchment paper in a large dish.
Spread evenly with a spatula.
Cover with a piece of parchment paper.
Compress the mixture with your hands as much as possible (serously) without crushing the cereal.
Freeze for one hour.
Take off the parchment paper, cut and eat! Store extra in the freezer or in an air-tight container kept in a cool place.
